Our Story

Surrounded by grape vines and sprawling vineyards in the heart of Hunter Valley Wine Country

IronBark Hill Brewing Co is situated on the grounds of IronBark Hill Vineyard.

Our unique venue is also home to the Peter Drayton Wines Cellar Door.

The first beers were brewed in 2016 in our 200L custom built German brewing system, and our Brewhouse opened to the public in 2017. Shortly after opening, we realised we needed a bigger brew kit, and expanded to include a 500L Braumeister brewing system.

Under the pump and struggling to keep up with demand, in the midst of Covid lockdowns we took hold of and meticulously assembled our brand new 1200L brewing unit, complete with a plethora of tanks and brites. Our small 200L kit and 3 tanks has quickly grown to a 1200L system with 10 tanks, with further plans for expansion in the mix.

At the Brewhouse you will find twelve beers and ciders pouring fresh on tap, ranging from Pale Ales and Lagers to Stouts and Porters – all brewed on-site by our brewing team. We also have a large selection of beers in cans for retail and wholesale purchase.

Our venue is open 6 days a week from 10am til 5pm. We are closed Tuesdays.

Andrew Drayton

Despite coming from a long line of winemakers – five generations in fact – Andrew’s passion from early on was the world of IT.

Working with computers since high school, Andrew also dabbled in home brew and enrolled in the TAFE Brewing course in 2016, with the aim of becoming a professional brewer. This coincided perfectly with the establishment of what is now IronBark Hill Brewing Co, which gave Andrew the opportunity to broaden his knowledge and skill in commercial brewing.

Andrew’s favourite part of working a brewery is seeing everything come together – from a simple idea to a cold schooner of the finished product! His favourite IronBark beer to brew is Old Nessie; and his favourite to drink is Pilsner.

Hayley Drayton

With a background working in the wine industry, Hayley has headed a variety of roles in the Brewery since 2016 – from customer support and sales to marketing and recipe development.

An active member of the Pink Boots Society of Australia – an organisation supporting women in the brewing industry – Hayley began formally studying brewing at the beginning of 2022. Now working alongside Andrew as Assistant Brewer, Hayley especially enjoys experimenting with new hop blends and malts, as well as fruit adjuncts.

Hayley’s favourite IronBark beer to brew is Black Forest Stout; her favourite to drink is Tickled Pink XPA.
